The customer approached CSI to build a completely new kitchen for producing white sauce. The existing kitchen was old, had several pieces of outdated equipment, relied on some manual processes, and could not keep up with the growth of the white pasta sauce business. A new system was definitely needed.

Prior to this project, CSI had great experience and success in other areas of the plant with modular units that were built at CSI's facility and shipped to the customer site for quick installation. Like many projects, the schedule for this project was very tight.

The project was such a success that this global customer chose to use this kitchen as an example for other facilities and as a new standard for installations.

CSI began discussions to determine whether this new kitchen should be built as modular units or if a more traditional field installation was desired. Due to many factors, it was determined that field installation was the desired path, so CSI mobilized a large crew of field craftsmen to complete the project.

  • 18 process tanks
  • 9 large mixproof valve clusters
  • 1 large 3-tank, 3-supply CIP system
  • 41 process pumps
  • Stainless steel platforms around the entire kitchen that had a walking deck height of 11 feet above finished floor
  • Thousands of feet of sanitary tubing

The end result was the on-time start-up of a fully automated, leading-edge kitchen designed and installed to provide ample open area to walk around equipment without interference of the process piping. The project was such a success that this global customer chose to use this kitchen as an example for other facilities and as a new standard for installations.
